Shrimp Lo Mein

We are still quarantined and that means no eating out. We are choosing to cook at home. My little Jonny wanted Chinese and since we had lots of of vegetable and shrimp, we decided for Lo Mein. One of our favorites when we eat Chinese food.


I listed the vegetables that I used but, use what you have at home. if you only have broccoli, then that is ok!


I do have to say that the must have vegetables are: the green onions, ginger and carrots. Along with the sauce ingredients. Other than that, this recipe is forgiving, toss your favorite vegetables.


I buy my noodles in the international food section at my local grocery store.


I think you will love this recipe, let me know how you enjoy! If you like the sauce, I also recommend you might try TABLESPOONS instead of teaspoons. I love the flavor!

Shrimp LoMein

6 - 8oz Egg Noodles, Lo Mein Noodles

2 Cups Shrimp, cooked (you can use fresh, but I only had frozen cooked)

2 Green Onions, chopped

1 TBS Ginger, julienned

1/4 Cup Red Bell Pepper, chopped

1/4 Cup Green Bell Pepper, chopped

1/4 Cup Mushrooms, chopped

1/4 Cup Red Cabbage

1/4 Cup Broccoli

1/4 Cup Carrots, Julienned

1/4 Cup Zucchini, Julienned

3 TBS Olive Oil

2 tsp Soy Sauce

2 tsp Oyster Sauce

2 tsp Sesame Oil

Sriracha (optional)

Salt and Pepper to Taste


Sauce

Wisk the soy sauce, oyster sauce and sesame oil, season with salt and pepper, and add sriracha for spice. Set aside.


Noodles

Cook noodles to package instructions, my tip is to boil the noodles for 4 minutes, drain and add them to ice bath, drain again and add to bowl with 1 TBS olive oil. Mix so that the oil combines well and noodles do not stick. Set aside.


To Cook

  1. Heat 2 TBS of olive oil in a large skillet, over medium heat. Add the green onions, ginger and carrots. Cook for 5 minutes, add shrimp, cook for 3 minutes, add the rest of vegetables (bell peppers, mushrooms, zucchini, cabbage, broccoli). Stir frequently until tender, about 5 minutes. Salt and Pepper if you would like.

  2. Stir in the noodles and the sauce mixture and toss gently until everything is combined.

  3. Serve right away!
