Pan Seared Tilapia with Tomatoes, Onions and Spinach

This is a regular on our home menu. It is very convenient to have the tilapia Or cod in the freezer. You will love this as a meal prep too!


Ingredients

4 Tilapia Fillets, rinsed and pat dry

2 Roma Tomatoes, diced

½ Onion, slices

1 cup Spinach

4 Tablespoons Olive Oil

Salt and Pepper


Instructions

1. Season tilapia with salt and pepper


2. Heat the olive oil in a skillet, medium heat, add tomatoes and onions. Sauté for 5 -7

minutes and set aside. I do this to season the oil and it adds more flavor in my opinion.


3. Add the tilapia and cook it for about 4 minutes per side. Add the tomatoes and onions back to the skillet, add the spinach, turn the heat to low and cover for 5 minutes.


4. Serve with a side of rice.
