Are brownie pans only for brownies? Not if they are Corning Ware! I use my utility pan for so many things, like serving fried rice.
I wrote about this piece a while back (HERE). These utilitly baking pans are great as serving dishes.
Last week our community had a really awesome event to support local farmers. We were able to buy a produce box of Georgia grown vegetables. The box included, corn, blueberries, green beans, vidalia onions, yellow squash, zucchini, bell peppers and broccoli. We eat broccolí as a side vegetable or add it to green smoothies. I had saved a fried rice recipe that had ground beef and broccoli last month. Since I have several Chinese and Thai ingredients in my pantry, this was a great opportunifty to try it out.
I plan on replacing the beef with ground chicken or turkey for more variety. Also, a quick tip if you do not have any leftover rice, use the Bird Eyes Frozen Rice Steamer Bags.
There were no leftovers, we loved it! I am sharing the written recipe but you can find the original and video on Seonkyoung Longest’s website.
GROUND BEEF AND BROCCOLI FRIED RICE RECIPE
Ingredients
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp sugar
1/8 tsp black pepper
3 tbsp cooking oil, divided
3 cloves garlic, chopped
1 tsp chopped ginger
6 oz ground beef
6 oz broccoli crowns
2 eggs
4 cups cooked day old cold jasmine rice
sesame oil and sesame seeds
Instructions
1. Combine soy sauce, oyster sauce, sugar and black pepper in a small mixing bowl, set aside.
2. Heat a wok over high heat, add 2 tbsp oil, garlic and ginger. Stir fry until you can smell the aroma, about 1 minute then add beef.
3. Break down beef well with wooden spoon. When the beef’s releasing its moist, add broccoli crowns.
4. Stir fry all together until beef’s golden brown and broccoli is 3/4 way cooked, about 1 minute, push them to a side of the wok and add 1 tbsp oil.
5. Crack 2 eggs into wok and scramble. When the eggs are set, mix with beef and broccoli.
6. Add cold rice and pour the sauce mixture around the edge of the work. This way the sauce will start sizzle for better flavor. Mix everything well until every single grain of rice is coated evenly with the sauce. Turn off the heat, garnish with sesame seeds and drizzle sesame oil right on top to your taste. Enjoy!
